Full Cooked Breakfast Bake
Serves: 8
Prep Time: 10 minutes
Cook Time: 40–45 minutes
Ingredients
- 1 kilo frozen hash browns ( depends on the amount you want to feed. I used 1kg worth)
- 1 can baked beans
- 8-10 breakfast sausages, cooked and sliced
- 6-8 slices streaky bacon, cooked until crispy
- 4–6 eggs (depends on how many you are feeding)
- 1-2 cups of grated cheese (cheddar, Edam or your favourite melt-y cheese)
Optional extras:
- Chopped chives or spring onions
- Salt & pepper to season
- A drizzle of BBQ or tomato sauce for serving
Method
- Bake the hash brown base
Preheat your oven to 200°C (fan 180°C). Lay the frozen hash browns in a single layer in a baking dish. Bake for 15–20 minutes until they’re golden and crisp around the edges. - Build the breakfast layers
Spread the baked beans evenly over the hot hash browns. Scatter the cooked sausages and crispy bacon over the top. You can cook them at the same time in the oven while the hash browns are cooking. - Add the eggs
Make small wells in the mixture and carefully crack an egg into each one. Season lightly with salt and pepper. - Top with cheese
Sprinkle the grated cheese over the entire dish. Keep it away from the eggs if you prefer visible yolks. - Bake until just set
Return to the oven for 10–15 minutes. Continue baking until the egg whites are set. Cook the yolks to your liking. The cheese should be melted and golden. - Serve and enjoy
Spoon into bowls or slice like a casserole. Add chopped chives or spring onions if you like, and enjoy a full cooked breakfast all in one!
