Anzac Biscuits Pantry Mix

A simple make-ahead Anzac biscuit mix with oats and coconut, ready to finish with butter and golden syrup when you want to bake.

Ingredients

For the Pantry Mix

  • 1 cup plain flour
  • 1 cup brown sugar
  • 1¼ cups shredded coconut
  • 1 cup quick oats

To Make the Anzac Biscuits

  • 125 g butter
  • 3 Tbsp water
  • 3 Tbsp golden syrup
  • 1 tsp baking soda

Instructions

To Prepare the Pantry Mix

  • Combine the flour, brown sugar, shredded coconut and quick oats in a large bowl.
  • Mix thoroughly, breaking up any lumps of brown sugar.
  • Transfer to an airtight container, jar or food-safe bag.
  • Label with the recipe name and date, along with the ingredients still required: 125g butter, 3 Tbsp water, 3 Tbsp golden syrup and 1 tsp baking soda.
  • Store in a cool, dry pantry until ready to use.

To Make the Anzac Biscuits

  • Preheat the oven to 160°C fan-bake and line a baking tray with baking paper or a silicone baking mat.
  • Empty the prepared Anzac Biscuits Pantry Mix into a large mixing bowl.
  • Add the butter, water and golden syrup to a saucepan. Heat gently until the butter has melted.
  • Remove from the heat, add the baking soda and mix well.
  • Pour the hot mixture over the dry pantry mix and stir until thoroughly combined. The mixture should hold together when gently squeezed.
  • Spoon portions of the mixture onto the prepared baking tray and shape into balls. Press each one down slightly.
  • Bake for approximately 12–15 minutes, or until lightly golden. Bake slightly longer if you prefer a crispier biscuit.
  • Allow to cool on the tray for a few minutes before transferring to a cooling rack. The biscuits will firm up as they cool.

Notes

  • The biscuits will still be soft when first removed from the oven and will firm up as they cool.
  • Bake for slightly longer if you prefer a crispier Anzac biscuit.
  • The unbaked biscuit mixture can be frozen and baked from frozen when needed.
  • Keep the prepared pantry mix sealed in an airtight container in a cool, dry place.
  • Label your pantry mix with the date and the ingredients still required.
  • Baking times are a guide, so keep an eye on the biscuits towards the end.
