Beef Stir-fry with Noodles

Tender marinated beef, colourful vegetables and egg noodles tossed through a simple sweet and savoury stir fry sauce, finished with crunchy cashews and sesame seeds.

Ingredients

Beef & Marinade

  • 500 g beef rump thinly sliced
  • ¼ cup soy sauce
  • 4 Tbsp brown sugar
  • ½ cup water
  • 2-4 cloves garlic minced
  • 2 Tbsp corn flour
  • 1 tsp sesame seeds

Stir Fry

  • 1 medium carrot thinly sliced or julienned
  • 1 medium red onion sliced into wedges
  • 3-4 cups mixed vegetables such as capsicum, broccoli, snow peas, green beans or cabbage
  • 2 Tbsp oil
  • ½ cup chopped cashews
  • 280 g dried thin egg noodles cooked according to packet instructions

Instructions

  • In a bowl, combine the soy sauce, brown sugar, water and garlic. Add the sliced beef and mix well to coat. Marinate for 10–20 minutes.
  • Cook the egg noodles according to the packet instructions. Drain and set aside.
  • Heat the oil in a wok or large frying pan over high heat. Remove the beef strips from the marinade, reserving the marinade for the sauce.
  • Stir-fry the beef in batches for 1–2 minutes, or until just browned. Remove from the pan and set aside.
  • In the same pan, stir-fry the carrot, red onion and mixed vegetables for 2–3 minutes. Add 2 Tbsp water, cover briefly and allow the vegetables to steam until just tender.
  • Return the beef to the pan. Add the reserved marinade and cornflour and cook for 1–2 minutes, stirring, until the sauce thickens and becomes glossy. Stir through the cashews.
  • Add the cooked noodles and vegetables and toss everything together until evenly coated and heated through.
  • Sprinkle with sesame seeds and serve immediately.

Notes

Notes
  • Marinate the beef for 10–20 minutes for extra flavour.
  • Cook the beef in batches to keep it tender.
  • Use any vegetables you have on hand.
 
Variations
  • Swap the beef for chicken or pork.
  • Use rice noodles instead of egg noodles.
  • Leave out the cashews if required.
 
Storage
  • Refrigerate leftovers for up to 3 days.
  • Reheat until piping hot before serving.
  • Best enjoyed fresh rather than frozen.
