Beetroot and Feta Dip

If you love bold colors and rich flavors, this dip is for you! The natural sweetness of beetroot combines with the creaminess of feta and cream cheese. This mixture creates a beautifully smooth and slightly tangy dip.

Equipment

  • 1 Food Processor or Blender

Ingredients

  • 1 x 450g canned beetroot drained
  • 225 g cream cheese softened by leaving it out of the fridge for 30 minutes before blending
  • 150 g feta if you don't enjoy feta leave it out
  • 1 tsp lemon juice
  • salt and pepper to taste
  • black sesame seeds to garnish (optional)

Instructions

  • Drain beetroot and add to the blender. Add the remaining ingredients and blend until nice and smooth. You can add some reserved beetroot juice if it is too thick. Refrigerate for 30 minutes before serving.

Notes

This dip is lovely served with toasted pita breads, corn chips or rice crackers or used as a dip for fresh vegetables on an entertainment platter.
