225gcream cheesesoftened by leaving it out of the fridge for 30 minutes before blending
150gfetaif you don't enjoy feta leave it out
1tsplemon juice
salt and pepperto taste
black sesame seeds to garnish (optional)
Instructions
Drain beetroot and add to the blender. Add the remaining ingredients and blend until nice and smooth. You can add some reserved beetroot juice if it is too thick. Refrigerate for 30 minutes before serving.
Notes
This dip is lovely served with toasted pita breads, corn chips or rice crackers or used as a dip for fresh vegetables on an entertainment platter.
