Beetroot and Feta Dip

Equipment

  • 1 Food Processor or Blender

Ingredients

  • 1 450 can beetroot drained I used baby but sliced works as well
  • 225 g cream cheese softened by leaving it out of the fridge for 30 minutes before blending
  • 150 g feta if you don't enjoy feta leave it out
  • 1 tsp lemon juice
  • salt and pepper to taste
  • 1 sprinkle black sesame seeds optional garnish

Instructions

  • Drain the can of beetroot
    Add everything into a blender and blend until nice and smooth
    You can add some reserved beetroot juice if it is too thick
    Refrigerate for 30 minutes

Notes

Lovely served with toasted pita breads, corn chips or rice crackers
This dip is also nice to use as a dip for fresh cut up veggies or platters
