Equipment

  • 1 large skillet or frying pan

Ingredients

  • 500 grams pork mince this recipe would adapt well to other mince verities
  • 2 cloves garlic
  • 500 ml cream
  • 1 Tbsp soy sauce or coconut aminos
  • ½ cup grated cheese optional
  • 150 g mushrooms sliced
  • 1 capsicum sliced
  • 500 g pasta I used pene but spaghetti would be nice too
  • ½ lemon juiced
  • 1 pinch dried thyme
  • ½ bunch spring onions chopped

Instructions

The Pasta

  • Put a large pot of water on the stove and cook the packet of pasta according to the instructions
  • once the pasta has cooked, drain and put aside to add to the mince base once it is ready

The Mince Base

  • while the pasta is cooking, prepare the mince base to save time
  • brown the mince in a pan, making sure to chop it up finely so there are no chucks of meat
    add the soy sauce
  • add chopped garlic once browned
  • add the cream, and thyme and simmer for 10 minutes
  • Add the remaining ingredients except the top green part of the spring onion. Leave them aside to top the dish off.
    Simmer for a further minutes
  • add the drained pasta and stir to combine and coat the pasta with the creamy sauce
  • add the remaining green spring onion tops to give the dish a pop of colour
  • Eat straight away

Notes

You can leave this dish to cool down and pop it into the fridge once cool enough.
We had ours the next day and just reheated it in the microwave. Add a touch more cream or water to help give it a saucy finish.
