Creamy Tomato Tortellini Soup

I loved this soup, any excuse to add pasta and I am onto a winner in my eyes. Set and forget soup if you are using the slow cooker.

Ingredients

  • 1 large onion diced
  • 1 large carrot diced
  • 1 large celery sticks diced
  • 1 tbsp olive oil I prefer to use The Good Oil
  • 4 cloves garlic minced
  • 2 x 400 g tinned tomatoes diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 500 ml vegetable or chicken stock
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 300 ml cream
  • 300 g stuffed tortellini any flavor is fine
  • 1 cup spinach chopped
  • salt and pepper to taste
  • shaved parmesan to garnish
  • fresh basil to garnish (optional)

Instructions

  • Place all the ingredients except the cream, spinach, and tortellini in the crock pot.
  • Cook on low until vegetables are tender, or high if you are in a hurry.
  • Once the vegetables are tender, use a stick blender to blend them all together.
  • Add the cream, tortellini, and spinach and cook for a further 30 mins or until the tortellini are cooked and heated through.
  • Garnish with shaved parmesan and fresh basil if you have it.
