Creamy Tomato Tortellini Soup
I loved this soup, any excuse to add pasta and I am onto a winner in my eyes. Set and forget soup if you are using the slow cooker.

Ingredients

large
onion
diced

carrot
diced

large
celery sticks
diced

tbsp
olive oil
I prefer to use The Good Oil
4
cloves
garlic
minced
2 x 400
g
tinned tomatoes
diced
1
tsp
dried oregano
1
tsp
dried basil
500
ml
vegetable or chicken stock
1
tbsp
balsamic vinegar
1
tbsp
brown sugar
300
ml
cream
300
g
stuffed tortellini
any flavor is fine
1
cup
spinach
chopped
salt and pepper
to taste
shaved parmesan
to garnish
fresh basil
to garnish (optional)
Instructions
Place all the ingredients except the cream, spinach, and tortellini in the crock pot.
Cook on low until vegetables are tender, or high if you are in a hurry.
Once the vegetables are tender, use a stick blender to blend them all together.
Add the cream, tortellini, and spinach and cook for a further 30 mins or until the tortellini are cooked and heated through.
Garnish with shaved parmesan and fresh basil if you have it.
