Ingredients

For the Beef

  • 1 kg beef mince
  • 1 medium onion diced
  • 6-7 garlic cloves chopped
  • 1 tsp ginger preferably fresh, or use ground ginger
  • 1 bunch spring onions sliced, to garnish

For the Sauce

  • ½ cup light soy sauce
  • 2 Tbsp honey or brown sugar
  • 2 Tbsp Chinese cooking wine or apple cider vinegar, white vinegar or cooking vinegar
  • 1 cup water

To Thicken

  • ½ Tbsp corn flour
  • 2 Tbsp water

For the Pickle

  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 2 Tbsp sugar
  • 2 carrots grated
  • 1 medium red onion finely diced
  • ½ long cucumber finely diced

To Serve

  • cooked rice enough for your family
  • fresh chilies optional

Instructions

  • In a bowl, stir together the apple cider vinegar, water and sugar until the sugar dissolves. Add the grated carrots, red onion and cucumber. Mix well and leave to marinate while you cook the beef.
  • Add the beef mince and diced onion to a heavy-based saucepan or frying pan. Cook, stirring and breaking up the mince, until the liquid has evaporated and the beef is starting to brown nicely.
  • Add the garlic and ginger and cook for another couple of minutes, stirring them through the mince.
  • Pour in the light soy sauce, honey or brown sugar, Chinese cooking wine or vinegar, and water. Stir to combine.
  • Mix the corn flour and 2 tablespoons of water together to make a smooth slurry. Stir it into the beef mixture and cook until the sauce thickens and coats the mince.
  • Spoon cooked rice into bowls and top with the sticky beef. Using tongs or a slotted spoon, add some pickle, leaving most of the juice behind. Sprinkle with sliced spring onions and serve. Add fresh chilies if you like.

Notes

  • Other Mince: Pork, chicken or venison mince should work nicely too.
  • Make It Saucier: Double the sauce ingredients if you prefer more sauce. As written, the sauce is intended to coat the mince rather than make it very saucy.
  • For Another Meal: Halve the cooked beef mixture and freeze one half for a quick dinner another day. Prepare fresh rice and pickle when you're ready to serve it.
  • Leftover Pickle: Pop it into a jar with its brine and keep it in the fridge.
