Homemade Instant Potato Soup Mix

A homemade potato soup mix made from pantry staples that stores well and creates a quick, creamy soup whenever you need it.

Homemade instant potato soup mix

Ingredients

  • 1 cup dehydrated potatoes
  • ¾ cup + 2 Tbsp milk powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1-2 Tbsp dried chives
  • 2 Tbsp chicken stock powder
  • ¼ tsp garlic powder
  • ½ tsp onion powder

Instructions

  • Add all ingredients to a large bowl and stir until well combined.
  • Transfer the mixture to a clean, dry jar or airtight container.
  • Seal and store in a cool, dry pantry until needed.

To Make Potato Soup

  • Add the entire soup mix to a saucepan with 3 cups water and 2 Tbsp butter.
  • Cook over low heat, stirring occasionally, until the potatoes are soft and the soup has thickened.
  • Stir through ¼ cup cream for a creamier soup. If you prefer a thinner consistency, add an extra ¼ cup water.
  • Heat through and serve.

  • Ensure all ingredients are completely dry before mixing
 
Variations
  • Add cheese, bacon, or extra herbs when serving
  • Swap chicken stock for vegetable stock
 
Cup of Soup Version
  • 4 tsp potato soup mix
  • 1 cup boiling water
  • Stir well and allow to sit for 2–3 minutes before serving
 
Storage
  • Store in an airtight container
  • Keep in a cool, dry pantry
