Peel the carrots and cut them into even-sized sticks or rounds so they cook evenly.
Spread the carrots onto a lined baking tray.

Toss everything to coat well.
Roast for 25–35 minutes, turning once halfway through.
Cook until the edges are caramelized and lightly golden.
Serve warm, with a sprinkle of fresh parsley if desired.
