Mac and Cheese for Breakfast? Yes, Please!

Breakfast is all about comfort and fueling your body for the day ahead. This dish features a creamy cheese sauce, crispy sausage, and soft poached eggs. It combines all the best breakfast ingredients into one easy meal. Plus, it’s quick to make, perfect for a lazy weekend brunch or a fun family breakfast.

Ingredients

  • 1 box of your favorite boxed mac and cheese 205 g or 7.25 oz
  • 1 1/4 cups milk
  • 1 1/2 cups hot water
  • 6 pork sausages take the skins off
  • 1/2 onion diced
  • 1/2 cup grated cheese optional
  • 1/2 tsp garlic powder
  • 1 tsp mixed herbs
  • 1/2 tsp onion powder
  • 1 egg per person
  • Parsley optional, for garnish
  • 1 tin baked beans optional

Instructions

  • brown the sausage. Use a meat chopper or masher to break up all the sausage until it is fine and crumbly. Add the onions and brown with the meat.
  • add the mixed herbs,onion powder and garlic powder
  • empty the contents of your boxed mac and cheese into the sauce pan. Add the milk and water, including the cheese mix packet.
  • stir until combined and simmer on a medium heat for half the time recommended on your boxed mac and cheese packet
  • about halfway through cooking, and while there is still some liquid, crack the eggs into the top of the dish
  • add some baked beans over the top of the dish (optional)
  • add cheese to the top of the dish
  • salt and pepper to taste
  • cover the dish with either a pot lid or a piece of tin foil. Turn the heat down to the lowest setting. Alternatively, turn it off and let the residual heat cook the eggs through. The rest of the liquid should now be fully absorbed.
  • garnish with fresh parsley
