No-Bake Apricot Slice Pantry Mix

A make-ahead apricot and coconut pantry mix that turns into an easy no-bake slice with butter and sweetened condensed milk.

Ingredients

For the Pantry Mix

  • 500 g plain sweet biscuits crushed into fine crumbs
  • 1/4 cup brown sugar
  • 2 cups chopped dried apricots
  • 1 cup shredded coconut

To Make the Slice

  • 1 tin sweetened condensed milk
  • 250 g butter
  • extra shredded coconut for topping

Instructions

To Prepare the Pantry Mix

  • Combine the crushed biscuits, brown sugar, chopped dried apricots and shredded coconut in a large bowl.
  • Mix well so the ingredients are evenly distributed.
  • Transfer to an airtight container, jar or food-safe bag.
  • Label with the recipe name and date, along with the ingredients still required: 1 tin sweetened condensed milk + 250g butter.
  • Store in a cool, dry pantry until ready to use.

To Make the Slice

  • Line a 25 × 38cm tray with baking paper or a silicone baking mat.
  • Empty the prepared pantry mix into a large mixing bowl.
  • Place the sweetened condensed milk and butter into a saucepan.
  • Heat over low heat until the butter has completely melted.
  • Pour the hot mixture over the pantry mix and stir thoroughly until everything is combined.
  • Transfer to the prepared tray and press firmly into an even layer.
  • Sprinkle extra shredded coconut over the top and lightly press it into the surface.
  • Cover and refrigerate for 2–3 hours, or until completely cold and firm.
  • Cut into squares or bars to serve.

Notes

  • Store the prepared pantry mix in an airtight container in a cool, dry place.
  • For best quality, aim to use the pantry mix within 6-12 months.
  • Check the best-before dates of the original ingredients when deciding how long to store your mix.
  • Keep the finished slice refrigerated in an airtight container.
  • The finished slice can also be frozen in individual portions.
  • Chop the dried apricots quite small so they're evenly distributed throughout the slice.
