Pancake Dry Mix

You will not believe how quickly and easily this homemade pancake mix comes together. I will also show you the best way to store it! Perfect fluffy pancakes every time, they have become a staple in our home, and I am delighted to show you just how you can make them for yourself. With the added bonus of saving, you time and money.

Two fluffy pancakes with melting butter ontop

Ingredients

Dry Mix

  • 4 cups Plain flour
  • 8 Tbsp sugar
  • 4 tsp baking powder
  • 10 tbsp milk powder
  • 2 tsp salt
  • Store in a glass jar or a suitable airtight container

Ingredients to make up one batch

  • 2 cups dry Mix
  • 1 cup water
  • 1 egg
  • 1/2 tsp vanilla essence

Instructions

  • Combine the dry mix ingredients and store in an airtight jar or container. This amount fills my 1 ½ litre glass jar.

To Mix One Batch

  • Add 2 cups of dry mix to a bowl and add wet ingredients. Combine well with a whisk. The batter should be nice and thick, almost like paint. If you like thinner pancakes feel free to add more water. If you like fluffy pancakes keep it thick.

To Cook

  • Heat a nonstick frying over medium heat and grease lightly with butter or oil.
  • For each pancake, place 2 tablespoons of batter into the pan. Cook until you see bubbles form on the surface. Turn and cook for a further 1 to 2 minutes or until pancakes are cooked through.
  • Garnish with your favourite toppings.

Dairy-Free Version

  • Omit the milk powder from the dry mix batch. Add your favourite dairy-free milk instead of the regular water volume.

Notes

My personal favourite pancake topping is lemon, sugar, and butter.
This recipe is so versatile. I use this mix for my pancakes, waffles, pikelets, and fritters.
