Tender Slow Cooker Pork & Apple Casserole

Tender slow-cooked pork chops with apples and onions in a rich, savoury gravy.

Easy slow cooker pork chop casserole with apples and onions

Ingredients

  • 4-5 pork chops
  • 3 apples sliced, skin left on
  • 2 onions sliced
  • cups water
  • 2 Tbsp tomato sauce
  • 2 tbsp brown sugar
  • 1 Tbsp apple cider vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp Worcestershire sauce
  • 1 tsp salt or to taste
  • ½ tsp dried sage
  • 2 Tbsp chicken stock powder

To Thicken

  • 1/4 cup cold water
  • 4 Tbsp corn flour

Instructions

  • Add the sliced apples and onions on the bottom of the slow cooker.
  • Place the pork chops on top of the apples and onions.
  • In a jug, combine the 1½ cups water, tomato sauce, apple cider vinegar, onion powder, garlic powder, Worcestershire sauce, salt, dried sage, sugar and chicken stock powder. Stir well.
  • Pour the sauce mixture over the pork, apples and onions.
  • Cover and cook on Low for 6–8 hours or High for 4–6 hours, until the pork is tender and beginning to fall apart.
  • Towards the end of the cooking time, combine the ¾ cup cold water and cornflour until completely smooth.
  • Stir the cornflour mixture into the slow cooker. Replace the lid and continue cooking until the sauce has thickened.
  • Taste and adjust the seasoning if needed, then serve hot.

Notes

Notes
  • Leave the skin on the apples if you like — there’s no need to peel them.
  • Cooking times can vary depending on the size and thickness of the pork chops.
  • Add the corn flour mixture towards the end of cooking to thicken the gravy.
 
Variations
  • Add sliced carrots for extra vegetables.
  • Swap dried sage for thyme.
  • Add a little brown sugar if using particularly tart apples.
 
Storage
  • Refrigerate leftovers for up to 3 days.
  • Freeze for up to 3 months.
  • Defrost overnight in the refrigerator and reheat until piping hot.
