Easy Sticky Beef Rice Bowls
Beef mince is one of those ingredients I always seem to have on hand, but sometimes it’s nice to make something a little different from the usual family favourites.
These Sticky Beef Rice Bowls are packed with flavour, with beef mince cooked in a savoury soy, garlic and ginger sauce, then served over rice with a quick homemade pickle made from carrots, cucumber and red onion.
The pickle is what really brings this meal together. It’s fresh, crunchy and slightly tangy, which works beautifully alongside the rich, sticky beef.
This recipe makes approximately 5–6 servings, and if you’re cooking for fewer people, the leftover beef freezes well for another easy dinner.

Why You’ll Love These Sticky Beef Rice Bowls
A different way to use beef mince. Mince is one of those ingredients I regularly reach for, and this is a lovely change from the usual pasta dishes, cottage pies and casseroles.
Full of flavour. Garlic, ginger, soy sauce and honey come together to make a sticky, savoury sauce that coats the beef beautifully.
Fresh and crunchy. The quick pickled vegetables add a lovely contrast to the warm beef and rice.
Easy to adapt. You can use another type of mince, adjust the sweetness or add fresh chilies if you prefer a little heat.
Great for making ahead. The cooked beef mixture can be frozen for another meal, and the pickle can be prepared earlier in the day.

Ingredients for Sticky Beef Rice Bowls
This recipe has three main parts: the sticky beef, a quick homemade pickle and cooked rice for serving.
Although the ingredient list looks a little longer, everything is straightforward, and several ingredients are everyday pantry staples.
For the Beef
- 1 kg beef mince
- 1 medium onion, diced
- 6–7 garlic cloves, chopped
- 1 teaspoon ginger, preferably fresh, or use ground ginger
- 1 bunch spring onions, sliced, to garnish
For the Sauce
- ½ cup light soy sauce
- 2 tablespoons honey or brown sugar
- 2 tablespoons Chinese cooking wine, or apple cider vinegar, white vinegar or cooking vinegar
- 1 cup water
To Thicken
- ½ tablespoon corn flour
- 2 tablespoons water
For the Quick Pickle
- ¼ cup apple cider vinegar
- ¼ cup water
- 2 tablespoons sugar
- 2 carrots, grated
- 1 medium red onion, finely diced
- ½ long cucumber, finely diced
To Serve
- Cooked rice, enough for your family
- Fresh chilies, optional
Method
- In a bowl, stir together the apple cider vinegar, water and sugar until the sugar dissolves. Add the grated carrots, red onion and cucumber. Mix well and leave to marinate while you cook the beef.
- Add the beef mince and diced onion to a heavy-based saucepan or frying pan. Cook, stirring and breaking up the mince, until the liquid has evaporated and the beef is starting to brown nicely.
- Add the garlic and ginger and cook for another couple of minutes, stirring them through the mince.
- Pour in the light soy sauce, honey or brown sugar, Chinese cooking wine or vinegar, and water. Stir to combine.
- Mix the corn flour and 2 tablespoons of water together to make a smooth slurry. Stir it into the beef mixture and cook until the sauce thickens and coats the mince.
- Spoon cooked rice into bowls and top with the sticky beef. Using tongs or a slotted spoon, add some pickle, leaving most of the juice behind. Sprinkle with sliced spring onions and serve. Add fresh chilies if you like.
What to Serve with Sticky Beef Rice Bowls
These rice bowls are really a complete meal on their own, with the beef, rice and pickled vegetables all working together.
I like serving the sticky beef over freshly cooked rice and adding a generous spoonful of the quick pickle. The spring onions give everything a fresh finish, and anyone who enjoys a little heat can add sliced fresh chilies.
If you’re feeding children who aren’t too keen on pickled vegetables, you can always serve the pickle separately and let everyone add their own.
You could also add some steamed broccoli or green beans alongside the bowls if you’d like to include a little more green veg.
Stacey’s Kitchen Tips
- Brown the mince properly. Allow the liquid to evaporate and the beef to start browning before adding the garlic and ginger. This helps develop a lovely savoury flavour.
- Prepare the pickle first. Making it before cooking the beef gives the vegetables time to marinate.
- Use fresh ginger if you have it. Fresh ginger gives the dish a lovely flavour, but ground ginger is a handy alternative.
- Mix the corn flour separately. Combining it with water before adding it to the beef helps prevent lumps in the sauce.
- Don’t expect a lot of extra sauce. This recipe is designed to coat the mince rather than leave it swimming in sauce.
- Drain the pickle when serving. Use tongs or a slotted spoon so you get the vegetables without too much of the pickling liquid soaking into the rice.
Variations & Substitutions
Different Mince: Pork, chicken or venison mince should work nicely in place of beef.
Honey or Brown Sugar: Either can be used to add sweetness to the sauce, depending on what you have in the pantry.
Chinese Cooking Wine or Vinegar: Chinese cooking wine works well, but apple cider vinegar, white vinegar or cooking vinegar are all options.
Make It Saucier: If you prefer a generous amount of sauce over your rice, double the sauce ingredients. The original recipe is intended to coat the mince rather than be very saucy.
Add Some Heat: Fresh chilies can be added when serving for anyone who enjoys a little spice.
Extra Vegetables: Steamed broccoli, green beans or other vegetables you have available can be served alongside the bowls.
Storage, Freezer & Make-Ahead Notes
Refrigerator Storage: Allow any leftover cooked beef to cool promptly before transferring it to an airtight container. Refrigerate and use within 3–4 days, reheating until piping hot.
Freezer Storage: The cooked beef mixture freezes well. Once cooled, divide it into suitable portions and freeze in airtight containers or freezer-safe bags for up to 2–3 months for best quality. Defrost in the refrigerator before reheating.
Make Ahead: You can cook the beef mixture earlier in the day and reheat it when you’re ready for dinner. Prepare the rice fresh and add the pickle just before serving.
Leftover Pickle: Transfer any remaining pickle and its brine to a clean jar or airtight container and keep it in the refrigerator. As this is a quick refrigerator pickle rather than a preserved pickle, it’s best enjoyed within a few days.
Leftover Rice: Cool cooked rice quickly, refrigerate promptly and use within 24 hours. Reheat only once, until steaming hot throughout. Alternatively, freeze individual portions soon after cooking.
Final Thoughts
Beef mince is such a useful ingredient to have on hand, and I always enjoy finding different ways to turn it into a family dinner.
These Sticky Beef Rice Bowls are full of flavour without being difficult to make, and the quick pickled vegetables really bring the whole meal together.
It’s also a recipe that works well when you’re trying to make your ingredients stretch a little further. You can cook the full batch, enjoy dinner and put some of the beef aside for another day.
I hope this gives you another easy dinner idea to add to your family meal rotation.
