Budget-Friendly and Quick

Two perfect reasons for making this delicious family meal. On a recent trip to New World, I saw an amazing reduced to clear section. To my surprise the whole store had lots of items on sale.

We had just dropped the children off to school, so all the marked down prices were available. I simply could not go past those amazing specials.

Once I decided on my protein and deciding on my meal, I saw some cream on a very good discount. So, my original recipe went out the back door and I came up with a new one. This is the perfect “shut the front gate: results!

  • ½ cup grated cheese (optional)

  • 500 g pasta I used penne, but spaghetti would be nice too
  • ½ lemon juiced
  • 1 pinch dried thyme
  • ½ bunch spring onions chopped

Method

  • The Pasta
  • Put a large pot of water on the stove and cook the packet of pasta according to the instructions

  • The Mince Base
  • While the pasta is cooking, prepare the mince base to save time
  • Brown the mince in a pan, making sure to chop it up finely so there are no chucks of meat

Notes

You can leave this dish to cool down and pop it into the fridge once cool enough.
We had ours the next day and just reheated it in the microwave. Add a touch more cream or water to help give it a saucy finish.
