Easy Smashed Potatoes with Garlic and Herb Butter

These easy smashed potatoes with garlic and herb butter are so delicious they will become a quick staple in your kitchen. The crispy skin of the potatoes goes so well with the garlic and herb butter. While the inside of the potatoes stays nice and fluffy, give these a-go but be sure to make plenty as they are that good!

What you will need

  • 1.5kg box of baby gourmet potatoes
  • herb butter (find the recipe link below)
  • 3 tbsp of oil (your choice). I like to use The Good Oil Sunflower Oil
  • Salt and pepper
  • A good pot
  • Baking tray

How to make your smashed potatoes

Wash and leave the potatoes whole.

Boil the potatoes in a large pot until just tender. You know they are ready when you can stick the potatoes with a sharp knife, and they feel soft. Cool the potatoes down under running cold water. Or you can get a large bowl of water with ice in it and cool them that way.

When you ready to make the smashed potatoes pre-heat your oven to 180°C fan bake

Now smoosh the potatoes with the bottom of a glass or jar (don’t push too hard). You want them to crack open, but still hold their shape.

Oil the potatoes. I like to use a great NZ based oil from The Good Oil and you can find them HERE

Season with salt and pepper to taste.

Bake until crispy on the outside and until golden.

Roughly 5 minutes before they are ready, drizzle the garlic herb butter over top of the potatoes. You could also leave this stage and once they are out of the oven pop the potatoes in a bowl and dollop the garlic and herb butter over the top. As the butter melts, toss the potatoes to evenly coat the potatoes.

Serve warm

I love to make these impressive potatoes for family gatherings like Christmas. They are a great side dish to make because you can make them a few days beforehand and have them sitting in the fridge waiting to go.

If you want to make them ahead of time just follow the first step of pre-cooking the potatoes and smooshing them. You can do this while they are hot or cold. Once they have cooled down you can pop them in your container and then follow the rest of the instructions when baking them.
