Perfect fluffy pancakes every time, they have become a staple in our home, and I am delighted to show you just how you can make them for yourself. With the added bonus of saving, you time and money.
How to make pancake mix and the best way to store it
- In a large bowl add your dry ingredients.
- Thoroughly mix together.
- Store in an airtight glass container preferably with a clip-top or screw-top lid.
- To make up your fluffy pancake mix, just add water, eggs, and vanilla.
- Freeze leftover pancakes in the freezer for a quick go-to breakfast.

The Pancake Mix
Do you buy pre-made store brought pancake mix? You know, the ones in the plastic containers with the handles? If you do, you will be super surprised just how easy it is to make your very own fluffy pancake mix, from simple ingredients that you most likely already have in your pantry! It is also a lot better for the environment with less plastic waste headed for the landfills with one large storage jar that will make several batches.
When we used to take the kids camping every summer, I would always grab a few bottles of the pre-bought supermarket mixes as they were quick and easy with little mess and convenient to store. However, they were also quite costly to buy. So, I got to thinking surely, I can make the pre-mix myself and store it in my Agee storage jars.
So that is just what I did! I came up with this mix a few years ago and it has never let me down. It is super quick to put together and all you need is one large bowl to mix all the dry ingredients into and then you can store your mix in any good storage container or jars. I recommend using Agee storage containers as they are sturdy glass jars and have solid clip-lid tops.
We live rurally and, in the past, have had terrible pantry moths so I converted my whole pantry into glassware and now I don’t lose hundreds of dollars’ worth of food every year and no more pantry moths!
The convenience of making your own pancake mix and why it pays to do it
Picture this if you will, you are having a lazy frosty winter’s morning lying in and the kids or (your tummy) are harping on at you for breakfast. They want pancakes! Rest assured you won’t need to get out a heap of bowls and ingredients and create a big fuss and mess of your kitchen counters.
No not today you won’t! You wipe the sleep from your eyes and slip into your slippers, (I know, I know it’s just pancake mix but just go with it hahaha) you walk into the kitchen and whip out your pre-mix, add your wet ingredients and whisk for a minute.
The hot pan is invitingly awaiting the sizzle of some butter and batter (say that fast 5 times I dare you! ) And before you know it the house now smells of sweet vanilla with the waft of butter, just awaiting the maple syrup or lemon you are about to adorn the fluffy pancakes with. Jeepers if this doesn’t convince you I don’t know what will (insert evil Mike Myers laugh)
Other great reasons to make your own pre-mix
- You most likely have all the ingredients already in your pantry. Think of it this way, you go to the expense of having flour, sugar, baking powder, salt, and milk powder. Why buy more in the form of another plastic bottle, when you already have it all at your fingertips in your pantry?
- Buying it twice, environmentally is not prudent but I guarantee you will also be saving so it’s a double bonus.
- Convenience, it is super easy and quick to have it in your pantry ready and waiting for that time you want it. It saves on the extra mess, and you can teach your older more capable children to make their own.

Pancake Dry Mix
Ingredients
Dry Mix
- 1 cup flour
- 1/4 cup sugar
- 1 tsp baking powder
- 2 1/2 tbsp milk powder
- 1/2 tsp salt
Wet Ingredients
- 1 cup water
- 1 egg
- 1/2 tsp vanilla essence
Instructions
- Combine the dry ingredients and store in an airtight jar or container. Times the mix as needed to fill up the containers you are using.
- Add 2 cups of dry mix to a bowl and add wet ingredients. Combine well with a whisk. The batter should be nice and thick, almost like paint. If you like thinner pancakes feel free to add more water. If you like fluffy pancakes keep it thick.
- Heat a nonstick frying over medium heat and grease lightly with butter or oil.
- For each pancake, place 2 tablespoons of batter into the pan. Cook until you see bubbles form on the surface. Turn and cook for a further 1 to 2 minutes or until pancakes are cooked through.
- Garnish with your favourite toppings.
