These simple but tasty apple pie turnovers are very quick to pull together. So if you need a dessert in a hurry, you will enjoy theses! They will be great to pull together if you have unexpected visitors and they are even great to freeze. Just pop them onto a baking tray and freeze them before baking.

To bake you can thaw in the fridge and then bake. I love them served cold with a lovely vanilla ice cream or whipped cream.

It is important to keep your pastry cool. You can use your own puff pastry or use shop bought. Today I have used shop bought to make it easy. fast and simple.

How they come together

It really is so simple to make. All you need is a circle shape to trace. Use which ever size suits your needs. I used a pudding bowl and traced it with a sharp knife. You could make mini ones if you like. The trick though is not to over fill the turnover or your filling will spill out everywhere.

Place a few spoon fulls of the pie filling in the center of the pastry circle. Fold over one edge to have a semi circle shape like in the photo below.

I have also used this filling to make a very yummy Incredible Apple Pie Spring Rolls. I came up with after having some leftover filling after making these turnovers. I didn’t want to waste the filling and I had some spring roll wrappers in the freezer. The combination of the apple pie filling and the crispy spring roll is a “Shut the Front Gate” recipe.

If you don’t know what that means, it is simply the best of the best recipe!

I served it with my Super, easy salted caramel sauce which is so quick and easy to make. It sure is delicious!

Prep Time:10 minutes
Cook Time:15 minutes
Total Time:25 minutes

Equipment

  • baking tray lined with either baking paper or silicone mat

Ingredients

Apple Pie Filling

  • 2 tins diced apples
  • ¼ cup brown sugar
  • 3 Tbsp corn flour
  • 1 Tbsp butter
  • 1 tsp mixed spice
  • ½ tsp cinnamon
  • fresh grated nutmeg or 1/4 tsp ground
  • 1 tsp raw sugar for adding to the top of the uncooked turnover

Turnovers

  • puff pastry sheets use as many as you wish to make. Theses would be perfect for the freezer as well.

Instructions

  • Remove puff pastry sheets from the freezer to thaw. Keep cold
  • In the meantime, combine the apple pie filling ingredients in a bowl.
  • Using a bowl, cut out large circle pastry discs (refer to video for how to instructions and size).
  • Place 2 tablespoons of filling on the centre of the pastry disc. Avoid the apple sauce as it will make the base too soggy.
  • Fold the pastry over to cover the filling.
  • Pressing down firmly with a fork, crimp the edge of the pastry. This helps to seal in the apple pie filling. Then prick the surface 3 times with a small knife.
  • Place the turnovers on a lined baking tray and brush the tops with water (you could also use milk or an egg wash for this step). Sprinkle over some raw sugar to create a crunchy top.
  • Bake at 180℃ fan-bake or 200℃ bake until golden brown. Roughly 15-20 minutes

Notes

TIP: Use puff pastry when it is barely thawed. Overly soft puff pastry gets floppy and sticky and is hard to handle. If your puff pastry softens too much, just stick it back in the fridge for a bit before making the turnovers.
