With its minimal ingredients and effortless preparation, it quickly became a favorite for busy home cooks. But as good as it was, I knew there was room for improvement. So, I got to work, tweaking the recipe to enhance the flavors, texture, and overall experience. The result? A richer, and more satisfying dish that you’ll want to make over and over again.

My Upgrades to the Viral Tomato Pasta Bake

1. Spinach

I added some of my frozen spinach into this recipe. Not only is it really good for you, but it is also a great way to use up frozen spinach. The added green to the dish makes it look stunning along with its delicious taste.

2. A Drizzle of Balsamic Glaze

After tasting the recipe, it was beautiful. However, I knew it lacked something. It came to mind that it needed some extra acidity. The tomatoes themselves had some acidity. I instantly thought a thick, beautiful, lush balsamic glaze drizzled over the top would take it to the next level. Let me tell you it was STUNNING.

2. A Block of Cream Cheese: Instead of Feta

I really liked the addition of cream cheese rather than feta. It gave the recipe such a rich, creamy taste and it turned the sauce into a decadent pasta.

Ingredients:

  • 2-4 cups cherry tomatoes ( I used frozen whole tomatoes )
  • 3-4 cloves garlic, minced
  • 1 small red onion, finely chopped
  • 1 block of cream cheese (225g)
  • 2 tbsp olive oil
  • 10 fresh basil leaves (torn)
  • 500 grams cooked pasta (penne, rigatoni, or your choice)
  • handful of spinach leaves (fresh or frozen)
  • 1/2 cup grated Parmesan cheese
  • Drizzle of balsamic glaze
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. To prepare the dish, put the tomatoes (fresh or frozen) in a baking dish. Add a block of cream cheese. Add the diced onion, minced garlic, and oil.
  3. Place the dish into the oven and bake for roughly 30 minutes
  4. Once the tomatoes are juicy, cooked and bursting at their seams. Check to see the cream cheese is all heated through and all melty.
  5. Combine Everything –Add the cooked, drained pasta. The spinach, basil, and Parmesan cheese. Stir well.
  6. Serve – Garnish with fresh basil and enjoy!

    Fantastic recipe . I watched your video. I’m having it tonight. Your written recipe leaves out putting the cream cheese in with the tomatoes ( just a wee oops but nay confuse those who didn’t see you make it. Thanks for the great recipes and for being so real.
