Ingredients

  • 2-4 cups cherry tomatoes I used frozen whole cherry tomatoes
  • 3-4 cloves garlic minced
  • 1 small red onion finely chopped
  • 1 block of cream cheese 225g
  • 2 tbsp olive oil
  • 10 fresh basil leaves torn
  • 500 grams cooked pasta penne, rigatoni, or your choice
  • handful of spinach leaves fresh or frozen
  • 1/2 cup grated Parmesan cheese
  • Drizzle of balsamic glaze
  • Fresh basil for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • To prepare the dish, put the tomatoes (fresh or frozen) in a baking dish. Add a block of cream cheese. Add the diced onion, minced garlic, and oil.
  • Place the dish into the oven and bake for roughly 30 minutes
  • Once the tomatoes are juicy, cooked, and bursting at their seams. Check to see the cream cheese is all heated through and all melty.
  • Combine Everything –Add the cooked, drained pasta. The spinach, basil, and Parmesan cheese. Stir well.
  • Serve – Garnish with fresh basil and enjoy!
