Ingredients

  • 2-4 cups cherry tomatoes I used frozen whole cherry tomatoes
  • 3-4 cloves garlic minced
  • 1 small red onion finely chopped
  • 1x 225g block of cream cheese
  • 2 tbsp olive oil
  • 10 fresh basil leaves torn
  • 500 g cooked pasta penne, rigatoni, or your choice
  • handful of spinach leaves fresh or frozen
  • ½ cup grated parmesan cheese
  • balsamic glaze to drizzle
  • fresh basil for garnish

Instructions

  • Preheat the oven to 200°C (400°F).
  • To prepare the dish, put the tomatoes (fresh or frozen) in a baking dish. Add a block of cream cheese. Add the diced onion, minced garlic, and oil.
  • Place the dish into the oven and bake for roughly 30 minutes.
  • Once the tomatoes are juicy, cooked, and bursting at their seams. Check to see the cream cheese is all heated through and melted.
  • Combine everything – add the cooked, drained pasta. The spinach, basil, and parmesan cheese. Stir well.
  • Garnish with fresh basil and enjoy!
