Sweetened Condensed Milk Salad Dressing

This delicious and quick salad dressing is such a good old-fashioned nostalgic recipe. It brings back happy memories of summers gone by with my grandparents for Christmas BBQs.

My Childhood Memories

I very much recall going to my grandparent’s home one summer at Christmas time. They had a huge quarter-acre section in the middle of town. The backyard seemed to have a huge back paddock to my 9-10-year-old brain. It was a massive veggie garden and I remember loads of lovely vegetables. Too many to mention and large Feijoa trees next to the ample garage.

We would have wonderful Christmases at this home that my granddad lovingly rebuilt. This is the home where I have the first memory of Condensed Milk Dressing over an iceberg lettuce salad. We sat around the outside table laden with food.

My Nana, would cut the iceberg lettuce quite finely. Something that I just can’t replicate like herself! It would have grated carrot, thin sliced tomatoes and sliced egg. I cant recall if there was any cheese in it as well. If there was it would have been grated.

Anyway, I remember having this salad. The dressing was sweet but vinegary at the same time and I fell in love with it.

My mum used to make it as well, to be honest. I don’t actually know if the dressing was made by her or my Nana. All the same, it was a staple classic on most tables in the good old Kiwi Summer.

The Ingredients

  • 400 g Homemade Sweetened condensed milk or 1x 395 g tin, see linked recipe on how to make your own
  • ¼ c malt vinegar you might like to use slightly more, just give it a taste to make it balanced in flavour
  • ½ tsp dry mustard powder you can substitute it jar mustard but use 1 tsp
  • salt and pepper to taste

Just play around with the flavourings until you get something that you like. It will firm up on being in the fridge and gets better as the days go on.

Try it on warm plain boiled potatoes! It is delicious, and you can even use it for coleslaw and potato salad.

Instructions

  • Place all ingredients into a jug or bowl and stir well to combine
  • The mixture takes a little mixing to come together
  • Check the taste for seasoning and for acidity balance between the sweetness

Store, covered in the fridge for up to a few weeks.
