You’ll know I’m a big fan of simple recipes if you’ve been around Farmers Wife Homestead for a while. I adore recipes that feel a little bit special. This is especially true when they use beautiful New Zealand ingredients. Today I’m sharing three delicious blueberry recipes featuring the stunning freeze-dried blueberries, powder and juice from Mamakublue. Their products are 100% NZ blueberries, full of colour, flavour, and packed with antioxidants.

1. Blueberry Float

Ingredients

  • ½ cup 100% blueberry juice
  • Lemonade
  • 2 scoops vanilla ice cream
  • Whipped cream
  • Freeze-dried blueberry powder (optional)

Method

  1. Pour the blueberry juice into a tall glass.
  2. Add lemonade until the glass is about ¾ full.
  3. Gently add two scoops of vanilla ice cream.
  4. Top with whipped cream and a sprinkle of blueberry powder if using.
  5. Serve immediately while fizzy, creamy, and fun!

2. Overnight Blueberry Oats

Ingredients (Serves 1)

  • ½ cup rolled oats
  • ½ cup milk (or your favourite alternative)
  • ½-1 cup vanilla Greek yogurt
  • 1–2 tsp Mamakublue freeze-dried blueberry powder
  • 1 Tbsp Mamakublue freeze-dried blueberry slices
  • 1–2 tsp honey or maple syrup (optional)
  • Extra blueberry slices for topping

Method

  1. In a jar or container, combine rolled oats and milk.
  2. Mix in the blueberry powder until the colour is evenly swirled.
  3. Add honey or maple syrup if you prefer extra sweetness.
  4. Stir through the freeze-dried blueberry slices.
  5. Cover and refrigerate overnight (or at least 4 hours).
  6. In the morning, give the oats a quick stir and top with yogurt and extra slices before eating.

3. Blueberry Ripple Ice Cream (No-Churn)

Ingredients

  • 400 g homemade sweetened condensed milk (or 1 tin store-bought)
  • 500 ml whipping cream
  • 1 Tbsp vanilla essence
  • 3 tsp Mamakublue freeze-dried blueberry powder
  • Freeze-dried blueberry slices (to taste)

Method

  1. In a large bowl, whip the condensed milk, cream and vanilla until thick and creamy, similar to softly whipped cream.
    Don’t overbeat — stop as soon as it holds shape.
  2. Scrape down the bowl halfway through to make sure everything mixes evenly.
  3. Spoon ¾ of the ice cream base into a freezable container and stir through a handful of blueberry slices.
  4. In the remaining ice cream base, stir in the blueberry powder and another sprinkle of slices.
  5. Dollop this blueberry mixture into the container and gently ripple it through using a spoon.
  6. Cover the surface with cling wrap to help prevent ice crystals.
  7. Freeze until solid.
  8. Rest at room temperature for 10 minutes before scooping.
    Best eaten within a week, but it will last longer in the freezer.

Make it budget-friendly

Frozen blueberries also work beautifully alongside Mamakublue’s freeze-dried products if you want to stretch your ingredients further.

Adjust sweetness to your taste

Blueberries can vary in tartness. Feel free to add a little extra honey to the oats or drizzle over the Blueberry Float.

️ Keep it simple

The Blueberry Ripple Ice Cream is incredibly adaptable. You can swap the blueberry powder for chocolate chips. Alternatively, use strawberry powder or crushed biscuits. These changes create new flavours. But trust me, you are going to want to try this version!


Variations

  • Vanilla & Blueberry Breakfast Parfait: Layer overnight oats with granola and extra yoghurt.
  • Berry Ice Cream Sandwiches: Scoop the ripple ice cream between two homemade cookies.
  • Blueberry Float Bar: Set out vanilla ice cream, fizz, and blueberry juice for guests to mix their own.
