Fresh Corn Salsa with Lime & Coriander
This fresh corn salsa is quick to make, easy to customise, and always a crowd-pleaser. Perfect for everything from summer gatherings to weeknight dinners.

Ingredients

fresh corn cobs
1
red onion
finely diced
½
cucumber
diced

punnet cherry tomatoes
diced
1
bunch fresh coriander
roughly chopped

Tbsp
fresh lemon or lime juice
salt and pepper
to taste
Instructions
Using a sharp knife, carefully cut the kernels from the cob and place them into a large bowl.
Add the diced red onion, cucumber, cherry tomatoes, and coriander.
Drizzle over the lemon or lime juice.
Season with salt and pepper to taste.
Toss everything together until well combined.
Serve immediately or refrigerate until ready to serve.

Fresh corn gives the best flavour.
Frozen or canned corn can be substituted.
Thaw and drain frozen corn and drain canned corn well.
Lime juice can be substituted for lemon juice.
Variations
Add chilli, avocado, or black beans.
Use parsley instead of coriander.
Use canned corn if needed.
Storage
Refrigerate for up to 3 days.
Best served fresh.
Not suitable for freezing.
