One of the things I love most about this recipe is how simple it is. Ingredients

  • 2–4 fresh corn cobs
  • 1 red onion, finely diced
  • ½ cucumber, diced
  • 1 punnet cherry tomatoes, diced
  • 1 bunch fresh coriander, roughly chopped
  • 2 Tbsp fresh lemon or lime juice
  • Salt and pepper, to taste

Method

  1. Using a sharp knife, carefully cut the kernels from the cob and place them into a large bowl.
  2. Add the diced red onion, cucumber, cherry tomatoes, and coriander.
  3. Drizzle over the lemon or lime juice.
  4. Season with salt and pepper to taste.
  5. Toss everything together until well combined.
  6. Serve immediately or refrigerate until ready to serve.
