Prep Time:15 minutes
Total Time:15 minutes

Ingredients

  • 2 cups shelled raw peanuts
  • 1 Tbsp neutral oil optional
  • 1 tsp flaky sea salt optional

Instructions

  • Preheat the oven to 180°C bake.
  • Spread the peanuts onto a baking tray in a single layer.
  • Roast for 9–10 minutes, or until lightly golden and fragrant.
  • Allow the peanuts to cool slightly, then transfer them to a food processor.
  • Blend until the peanuts break down into crumbs, then continue processing until they form a smooth peanut butter. This can take several minutes depending on your machine.
  • Add the salt and oil, if using, and blend again until combined.
  • Taste and adjust the seasoning if needed.
  • Transfer to a clean jar and store in the fridge.

For Crunchy Peanut Butter

  • Remove approximately ⅓ cup of the roasted peanuts before blending. Chop the nuts for your desired texture.
  • Blend the remaining peanuts until smooth.
  • Stir the reserved chopped peanuts through the finished peanut butter.

Notes

Notes
  • The peanut butter may seem dry at first but will become smooth as the peanuts release their oils
  • Scrape down the food processor as needed during blending

Variations
  • Add honey for sweetness
  • Add cinnamon or a little cocoa powder for a different flavour

Storage
  • Store in the fridge
  • Stir before use if natural oil separation occurs
