Cheeseburger Spring Rolls – Easy Crowd-Pleaser Snack

The smell of mince browning in the pan always takes me back. It reminds me of family dinners as a kid. On the farm, a cheeseburger night was a real treat—juicy patties, fresh buns, and that tangy hit of pickle. But let’s be honest. Cheeseburgers aren’t always the easiest thing to throw together. You’ve got kids to feed, animals waiting, and only a short window before everyone’s hungry again.

That’s where these Cheeseburger Spring Rolls come in. They’re quick and fun. They taste like all the best bits of a cheeseburger tucked inside a crispy golden wrapper. Better still, they’re freezer friendly. I can make a big batch and pull them out for school lunches. They are perfect for smoko breaks or when unexpected visitors turn up.

It’s the kind of recipe that makes you look impressive. In reality, it’s just a few pantry staples wrapped up and air-fried to perfection. Rustic, homely, and a little bit cheeky… exactly how I like to cook here at Farmers Wife Homestead.


Step-by-Step Recipe

Serves: 20
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients

  • 1kg beef mince (about 2 lb)
  • 2 Tbsp garlic powder
  • 1 tsp salt
  • 4 Tbsp worcestershire sauce
  • 2 Tbsp onion powder
  • ¼ tsp ground black pepper
  • 1.5 cups tomato sauce (ketchup)
  • 3 Tbsp american-style mustard
  • 3/4 cup finely diced gherkins or pickles. Sweet and sour are the best.
  • 3 tsp my gravy mix (recipe linked)
  • 20 spring roll wrappers (thawed if frozen) 215mm x 215mm or 330grams
  • Water (for sealing)
  • Oil for spraying over the spring rolls before air-frying

Method

  1. Cook the filling – In a large frying pan, add the mince, breaking it apart with a wooden spoon. Cook until browned all over. Drain excess fat if needed.
  2. Stir in the remaining ingredients. Mix well, then remove from heat. Let cool for 30 minutes.
  3. Assemble the rolls – Place a spring roll wrapper on the bench with one corner pointing towards you. Spoon about 1 heaped Tbsp of filling just below the center. Fold the bottom corner over the filling, then fold in both sides, and roll up tightly. Brush the top corner with water to seal. Repeat with the remaining wrappers and filling.   4. Spray both sides of the spring rolls with oil.
  5. Cook – Cook the spring rolls in an air-fryer on 200°C (350°F) for 10 minutes. Then flip them over and cook for a further 3 minutes, or until golden and crisp. Season with salt. You can also deep fry if you prefer, but this method is healthier for you.
  6. Serve hot with extra tomato sauce or a creamy burger dipping sauce.

Stacey’s Kitchen Tips

  1. Keep Them Crisp – If you’re making them ahead for a party, keep cooked rolls warm in a low oven. Set the temperature to about 120°C / 250°F. Keep them warm until they are ready to serve.
  2. Oil-Free Version – Don’t fancy deep frying? Bake them with a brush of oil or use an air fryer—they still come out crispy without the extra oil.
  3. Bulk Cooking Trick – Double the recipe and split the filling. Freeze one batch of filling on its own to save time later. Or just make loads up at a time. They are perfect for freezing.
  4. Dipping Sauce Ideas – Try mixing mayo, tomato sauce, and a little mustard for a quick “burger sauce” dip.
  5. To Cook from Frozen – Simply cook at a lower temperature of 180°C until heated through.

Serving Suggestions

  • Line them up on a platter with dipping sauces for parties.
  • Serve 3–4 rolls with a side salad as an easy weeknight dinner.
  • Tuck leftovers into the kids’ lunchboxes—they taste just as good cold.

Variations

  • BBQ Cheeseburger Spring Rolls – Swap tomato sauce for BBQ sauce for a smoky twist.
  • Cheeseburger Deluxe – Add chopped bacon, jalapeños, or even a little shredded lettuce after frying for crunch.
  • Cheesy Overload – Add grated cheese to the mix once it is cold and before rolling the spring rolls.
