Quick Corn Fritters Recipe | 15-Minute Meals
Life can be a bit of a whirlwind. Dinner sneaks up faster than you can say what’s for tea. These quick homemade corn fritters will be your new best mate. This is Episode 2 in my 15-Minute Meals series. The recipes are designed to make life easier when you’re short on time. You still get something shut-the-front-gate good.
These fritters are light, fluffy, and golden on the outside, with that irresistible sweet pop of corn in every bite. They’re perfect for lunchboxes or weekend brunches. Enjoy them as an easy dinner with a bit of salad or crispy bacon on the side.
And here’s the real secret: we’re using my Homemade Pancake Dry Mix as the base! It’s one of my most-loved pantry staples. It makes this fritter recipe so fast every single time. It also ensures the recipe is so consistent.

Serves: 4 – 6
Prep time: 5 minutes
Cook time: 10 minutes
Ingredients:
- 2 cups of Farmers Wife Homestead Pancake Dry Mix (recipe is linked below)
- 1 egg
- 1 cup water (or a little more if needed)
- 1 can canned cream corn kernels 410g or fresh corn off the cob you can use frozen as well (see printable recipe for more details)
- 1 cup grated cheese (optional but so good!)
- 100g diced cooked bacon (Don’t overcook the bacon)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp salt and pepper to taste
- 1 Tbsp oil or butter for frying
- optional extras
- sour cream (whipped up to be smooth and creamy)
- sliced spring onions
- chilli flakes
- diced peppers
Method:
- In a medium bowl, whisk the egg and water together.
- Stir in the pancake mix until you get a smooth, spoonable batter — not too thick, not too runny.
- Fold through the corn, cheese, bacon, onion and garlic powders.
- Season to taste
- Heat oil or butter in a frying pan over medium heat.
- Drop spoonfuls of the batter into the pan and cook for 2–3 minutes each side, until golden brown and puffed.
- Keep warm on a paper-towel-lined plate while you finish the batch.
- I like to serve three medium-sized fritters stacked on top of each other.
- Top with the whipped sour cream and garnish with spring onions.
Stacey’s Kitchen Tips
- Make it cheesy: Add a handful more of grated cheddar or Parmesan for extra flavour.
- Veggie boost: Finely grate carrot or zucchini. You can even add a bit of chopped spinach. These can sneak in some extra goodness for the kids.
- Keep them warm: Pop finished fritters in a low oven while you cook the rest so they stay crispy. Although they are just as nice served cold.
- Freeze ahead: Let them cool completely, then layer between baking paper and freeze in a bag. Reheat straight from frozen in the oven or air fryer for a fast snack.
Variations
- No creamed Corn? If you can’t get creamed corn, just leave it out and use either fresh off the cob or frozen corn. Add 1-2 cups.
- Spicy Fritters: Mix in a pinch of chilli flakes or a dash of hot sauce.
- Breakfast Stack: Serve fritters with a poached egg and a side of avocado for a café-style breakfast at home. Go ahead and add an extra side of bacon as well. YUM!
