Golden Dumplings

Golden dumplings are one of those old-fashioned puddings that feel simple in the best possible way. Soft dumplings cooked in a rich golden syrup sauce might not look fancy, but they’re warm, comforting, and exactly the kind of dessert many of us grew up with.

This is the sort of pudding that fills the kitchen with a really nostalgic smell while it cooks. The dumplings become soft and fluffy, while the sauce thickens into a rich syrup underneath. It’s especially good on colder evenings when you want something warm and filling without needing complicated ingredients.

Recipes like this are a good reminder that older puddings were often made from very basic pantry staples. Flour, butter, sugar, milk, and golden syrup were enough to make something that felt like a real treat.

Recipe Card

Ingredients

Dumplings

  • 2 cups flour
  • 3 tsp baking powder
  • 4 Tbsp sugar
  • ½ tsp salt
  • 75 g butter, softened (or dairy-free spread should work)
  • ¾ cup milk (Use DF milk if needed)
  • 2 Tbsp golden syrup

Sauce

  • 75 g butter (DF spread should work as well)
  • 1 cup brown sugar
  • 3 cups water
  • ⅓ cup golden syrup

Method

  1. In a large bowl, combine the flour, baking powder, sugar, and salt. Rub the softened butter into the dry ingredients until the mixture resembles breadcrumbs.
  2. In a small jug, mix together the milk and golden syrup. Pour into the dry ingredients and stir until a soft dough forms.
  3. Divide the dough into 8 evenly sized dumplings and set aside while you prepare the sauce.
  4. In a large saucepan, combine the butter, brown sugar, water, and golden syrup. Bring to a gentle simmer over medium heat.
  5. Carefully place the dumplings into the simmering sauce. Cover with a lid and cook for about 8 minutes.
  6. Remove the lid, gently turn the dumplings over, and continue cooking uncovered for another 10 minutes, or until the dumplings are cooked through and the sauce has thickened into a glossy syrup.
  7. Serve warm with cream, custard, or ice cream if desired.

  • Warm custard
  • Vanilla ice cream
  • Whipped cream
  • A cup of tea or coffee

  • Keep the sauce at a gentle simmer so the dumplings cook evenly
  • Don’t overcrowd the saucepan or the dumplings can stick together
  • The sauce thickens more as it cools
  • Golden syrup gives the pudding its classic flavour

Variations & Substitutions

  • Add a pinch of cinnamon to the dough for extra warmth
  • Swap golden syrup for maple syrup for a slightly different flavour
  • Add chopped dates or raisins to the dumpling mixture
  • Serve with stewed fruit for a fruitier version

Storage, Freezer & Make-Ahead Notes

  • Store leftovers in the fridge for up to 2 days
  • Reheat gently on the stove or in the microwave
  • Best served warm
  • Not ideal for freezing as the dumplings soften further once thawed
