Homemade Chicken Gravy Mix
Makes: 1 small jar (approx. ½ cup gravy mix)
Prep Time: 5 minutes
Cook Time: 3–5 minutes (when preparing gravy)
Total Time: 5 minutes
Ingredients
- 4 Tbsp plain flour
- 4 Tbsp chicken stock powder
- 1 tsp onion powder
- 1 tsp garlic powder
- ¼ tsp dried thyme
- ¼ tsp dried sage
Method
- Make the mix:
Add all ingredients to a bowl and whisk together until well combined. - Store:
Transfer the mixture into an airtight jar or container. Store in a cool, dry pantry for up to several months. - I make up a triple batch so I have more stocked up in my pantry.
To Make the Gravy
- Add 1 cup of cold water to a saucepan.
- Add 2–3 tablespoons of the dry gravy mix (use 2 Tbsp for a thinner gravy, 3 Tbsp for thicker).
- Whisk until smooth.
- Heat over medium–high, whisking consistently, until thickened and glossy.
- Taste and adjust seasoning if needed.

A Note About Supermarket Stock Powders
Not all chicken stock powders are created equal. Some supermarket brands can be quite salty, and that will directly affect the flavour of your gravy mix. I recommend choosing a brand with a milder, cleaner flavour so you have full control over the seasoning.
If the stock powder you have is on the salty side, simply:
- Use less stock powder in your dry mix, or
- Use 2 Tbsp of gravy mix instead of 3 when preparing the gravy.
This small tweak keeps everything balanced and delicious.
Stacey’s Kitchen Tips
- Whisk from cold: Always start with cold water — it prevents lumps.
- Flavour boost: Add a splash of cream or a tiny knob of butter just before serving for richness.
- Make it ahead: Keep a double batch in your pantry for winter meals.
- Use as seasoning: Sprinkle a teaspoon into casseroles or slow cooker meals for extra chicken flavour.
Variations
- Herby Gravy Mix: Add dried parsley or rosemary.
- Garlic Lovers Mix: Increase garlic powder to 2 tsp.
- Golden Roast Style: Add a pinch of turmeric for colour.
- Low-Salt Version: Halve the stock powder and increase the flour slightly.
