What to Serve with No-Bake Lemon Slice
This is a lovely little slice to enjoy with a cup of tea or coffee, particularly when you want something sweet without a large dessert.
It also works beautifully as part of a homemade afternoon tea spread alongside biscuits, muffins or other slices.
If you’re preparing a plate of baking to share, you can cut the lemon slice into smaller squares so everyone can enjoy a little piece.
Stacey’s Kitchen Tips
Crush the biscuits well. Fine biscuit crumbs help the base hold together, although a few slightly larger pieces are perfectly fine if you enjoy a little extra texture.
Press the mixture firmly. Take a moment to press the biscuit base evenly into the tin so it holds together when cut.
Use softened butter for the icing. This makes it easier to beat the icing until smooth and creamy.
Allow time to chill. The slice needs to firm up in the refrigerator before cutting, so it’s worth making it ahead of when you plan to serve it.
Use a sharp knife. Wiping your knife between cuts helps keep the icing neat.
Variations & Substitutions
Different Biscuits: Plain sweet biscuits work well for this recipe, but you can use another similar biscuit depending on what you have available.
Extra Lemon Flavour: If you prefer a stronger lemon flavour, add a little finely grated lemon zest to the biscuit base or icing.
Desiccated or Shredded Coconut: Either can be used, depending on the texture you prefer.
Smaller Pieces: Cut the slice into bite-sized squares when serving alongside other baking for morning tea.
Storage, Freezer & Make-Ahead Notes
Refrigerator Storage: Store the finished No-Bake Lemon Slice in an airtight container in the refrigerator for approximately 4–5 days.
Make Ahead: This is a great recipe to prepare the day before you need it. Keeping it chilled allows the biscuit base to firm up, making it easier to cut into neat pieces.
