These Russell Hobbs Multi Cooker – Easy Nachos, are super quick and easy. Follow these simple steps to have dinner on table in under 40 minutes from frozen mince. I often use this recipe on nights that I have forgotten to grab meat out of the freezer.

The other added bonus of making this in the pressure cooker means it is a hands-off recipe. You can set and forget, saving time to catch up on any other pressing needs around the home. I also like to have this recipe frozen so that I can just take it out and thaw it for a quick dinner later on.

Can these be turned into a vegetarian option?

They certainly can! Just omit the mince for extra cans of beans and up the tomato. The same spices and herbs being used, making this another quick and versatile option. You can still use the pressure cooker, however, use the sauté function rather than pressure cook.

Russell Hobbs Multi Cooker – Easy Nachos

Equipment

  • 1 Pressure Cooker
  • Or use a frying pan if you do not have a pressure cooker

Ingredients

  • 1 kilo minced beef you could use venison, pork, or chicken if you wish. If I need a quick dinner and I have forgotten to take meat out of the freezer I use frozen mince. You could use fresh, however.
  • 1 cup water use this water if you are pressure-cooking the frozen mince. Otherwise use the cup of water after you brown the fresh mince
  • 2 tsp cumin ground
  • 2 tsp coriander ground
  • 2 tbsp mixed herbs dried
  • 1 tsp salt
  • 1 pinch pepper
  • 2 tsp garlic crushed
  • 2 tsp paprika ground
  • 1 large onion diced
  • ½ cup tomato paste
  • 2 410g cans of red kidney beans
  • 1 400g tinned diced tomatoes or a pint of diced tomatoes

Instructions

  • If you are using frozen mince, add 1 cup of water and set the pressure cooker to 18 minutes. Once the pressure cooker has finished the 18 minutes, let the steam out. Then turn the pressure cooker onto the sauté function and use a potato masher to take any large chunks out of the mince. If you are using fresh mince, use the sauté function to brown the mince instead of the pressure cook function.
  • Once the meat is browned, add the remaining ingredients.
  • Simmer for a further 15 minutes on the sauté function.
  • If you find the mix is drying out, add a little more water.

Notes

In the video, I used a pressure cooker to cook my nacho mix. For further instructions on how to do that you can watch the video. If you don’t want to use a pressure cooker you can just use a frying pan.
This nacho mix is great to have in the freezer and I also like to use the same recipe for our tacos. I just omit the kidney beans.
