But let’s be real: no one wants to spend hours in the kitchen. You’re already bundled up in three layers. You’re just trying to survive the week.

That’s why I’m sharing two easy, soul-soothing soups that require minimal effort but deliver maximum flavor. Whether you’re looking for a quick lunch or a slow-simmered dinner, these cozy recipes have you covered.


Broccoli and Ricotta Soup: Light, Creamy, and Surprisingly Fancy

This soup is a creamy green dream. It feels far more indulgent than its humble ingredient list suggests. Beautiful broccoli with silky ricotta to create a velvety texture that’s both comforting and nourishing. It’s a great way to sneak in some greens. The ricotta adds just the right amount of richness without being heavy.

Top it with a swirl of olive oil and fresh ricotta. Add some cracked black pepper or a handful of crunchy croutons. You’ve got yourself a restaurant-worthy bowl in under 30 minutes. Ideal for weeknight dinners, cozy lunches, or when you’re craving something wholesome but don’t want to overthink it.


Broccoli and Pea Soup topped with Ricotta

Stunning and simple, which makes this such a budget-friendly recipe.

Ingredients

  • 1 large head broccoli cut into florets, save the broccoli stalks, peel and slice them to use as well
  • 2 sticks celery diced
  • 1 large onion diced
  • 4 cloves garlic chopped or minced
  • 2 cups frozen peas
  • 1 litre stock vegetable or chicken. You might need an extra cup or two.
  • 200 g fresh ricotta for topping the soup
  • 2 tbsp good oil olive oil or other healthy oil

Instructions

  • In a large saucepan soften the onions, celery and broccoli stalks and cook on a low to medium heat until softened. Add the garlic when they are just about tender.
  • Add the stock, broccoli and cook until the broccoli is just tender. Add the frozen peas and bring it all back to the boil and then shut off the heat. Do not over cook the broccoli or peas. You want a nice green soup.
    If the vegetables are not sufficiently covered with stock add some more.
  • Using a hand stick blender, blend the soup and use salt and pepper to taste. You could add some heavy cream at this stage if you want a creamier soup.
  • Ladle the hot soup into bowls and garnish with a drizzle of nice olive oil, crispy croutons, and some mint leaves.

Slow Cooker Creamy Tomato Tortellini Soup: Comfort in a Crock

Now for the soup that basically cooks itself—creamy tomato tortellini soup made right in the slow cooker. This one’s a crowd-pleaser and a time-saver all in one pot. Toss in your tomatoes, broth, seasonings, and let it simmer low and slow while you do literally anything else. Then, just before serving, stir in your cheese tortellini and a splash of cream.

The result? A rich, tangy tomato base, pillow-soft pasta, and a decadent creamy finish that’s exactly what your chilly day needs. Serve with a grilled cheese or a chunk of crusty bread, and you’ve got comfort food perfection. If you are short on time, feel free to make this soup also on the stove top.


Creamy Tomato Tortellini Soup

I loved this soup, any excuse to add pasta and I am onto a winner in my eyes. Set and forget soup if you are using the slow cooker.

Ingredients

  • 1 large onion diced
  • 1 large carrot diced
  • 1 large celery sticks diced
  • 1 tbsp olive oil I prefer to use The Good Oil
  • 4 cloves garlic minced
  • 2 x 400 g tinned tomatoes diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 500 ml vegetable or chicken stock
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 300 ml cream
  • 300 g stuffed tortellini any flavor is fine
  • 1 cup spinach chopped
  • salt and pepper to taste
  • shaved parmesan to garnish
  • fresh basil to garnish (optional)

Instructions

  • Place all the ingredients except the cream, spinach, and tortellini in the crock pot.
  • Cook on low until vegetables are tender, or high if you are in a hurry.
  • Once the vegetables are tender, use a stick blender to blend them all together.
  • Add the cream, tortellini, and spinach and cook for a further 30 mins or until the tortellini are cooked and heated through.
  • Garnish with shaved parmesan and fresh basil if you have it.
