Ingredients
- 2–4 fresh corn cobs
- 1 red onion, finely diced
- ½ cucumber, diced
- 1 punnet cherry tomatoes, diced
- 1 bunch fresh coriander, roughly chopped
- 2 Tbsp fresh lemon or lime juice
- Salt and pepper, to taste
Method
- Using a sharp knife, carefully cut the kernels from the cob and place them into a large bowl.
- Add the diced red onion, cucumber, cherry tomatoes, and coriander.
- Drizzle over the lemon or lime juice.
- Season with salt and pepper to taste.
- Toss everything together until well combined.
- Serve immediately or refrigerate until ready to serve.
